Soak half a pound of dried pinto beans in water overnight. Change the water a few times if possible.
Rinse beans. Cook with a strip of kombu (seaweed) in a pressure cooker according to directions. The kombu helps remove gas and provides additional nutritional content to the beans.
In a large skillet, saute one whole diced onion in olive oil until almost carmelized.
Add 1 tbsp granulated garlic powder, 1 tsp salt, 1 tsp pepper, 1 tbsp of powdered cumin, 1 tbsp chili powder, and 1/4 tsp cayenne to the sauteeing onions and stir. Onion mix will get very thick.
Start adding cooked beans and a little bean water to the onions. Mash beans. Keep adding more beans and more bean water, mashing with each addition, until all the beans are mashed up in the skillet. Add enough bean water to get desired consistency.
