Wheel of Time Savory Beef and Mushroom Stew

2 carrots- finely diced
2 ribs celery- finely diced
1 onion- finely diced
1 parsnip with parsley top- finely diced
2 turnips- cubed
Rutabaga- cubed
Fresh Sage, Thyme, Rosemary
2 lbs Veal stew meat
2 cups red wine
2 boullion cubes
2 16-oz containers fresh sliced white mushrooms
2 16-oz containers fresh portabella mushrooms, diced

The carrots, celery, onion, and parsnip should be very finely diced. The point is for them to melt away when they cook so that they impart their flavor without actually seeing them in the stew.
Put carrots, celery, onion, parsnips, parsley, rutabaga, sage, thyme, rosemary, veal stew meat, wine, and boullion cubes into a crock pot. Add additional water if it seems necessary, but remember that the aromatic vegetables will release their liquid during cooking.
Add only one of the containers of white mushrooms, and only one of the portabella mushroom containers.
Cook in crockpot on low for about 8 hours.
Add the second containers of mushrooms.
Stew will be very aromatic, and only the meat and mushrooms should be visible.
